New Banana Bread recipe in Tales from the kitchen witch

Im trying a new Banana bread recipe.
Its almost bread dough its cake dough ish like material.
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt.
1 teaspoon ground cinnamon
1/2 cup butter room temperature
3/4 cup packed brown sugar
2 large eggs ( fresh is best!)
1/3 cup greek yogurt or sour cream ( i used greek yogurt this time!)
2 cups ( roughly 4 large) overripe bananas PLUS two bananas.
1 teaspoon vanilla extract
3/4 cup walnuts or pecans.
1 whole apple
preheat oven to 350. and grease your pan.
Mix flour, baking soda, salt and cinnamon ( add an extra dash of cinnamon because… trust me)
Using handheld mixer. Mix 2 cups bananas to a smooth mash!! Mix butter, brown sugar till smooth and creamy, Add in two eggs, one at a time. Mix in yogurt, and vanilla.
In a bowl, Mash the other two of the bananas using a fork. Mash into large chunks. This gives your bread a yummy chunky burst of banana.
Slowly mix in dry ingredients till combined. The dough will be chunky.
Pour into greased pan.
Chop apple into small pieces. Put on top of your bread dough. Sprinkle on crushed walnuts or pecans. Using a spatula, fold the add ins gently.
Cook for roughly 50-60 minutes. First half hour, cook uncovered. Second half hour cook covered by foil to prevent the tops from browning too much.
Cook until a toothpick or knife inserted in the center comes out clean.
Allow to cool fully before cutting. This makes a springy and moist bread. Cutting it warm causes the bread to dry out.
My optional add ins.
I add a tablespoon of pumpkin pie spice or nutmeg to the dough. I add in an extra teaspoon of cinnamon. I cut the sugar down slightly by about 2 tablespoons. I find the sweetness of the bananas can be overpowering with brown sugar at full recipe. Sometimes I cut it back a bit more then that to about a half a cup.
Apples, raisins and walnuts or pecans are all excellent add ins for the bread depending on your favorite flavor profiles. I cut my apples into half inch chunks. Nuts i crush in a bag to make them smaller/finer. I use about a half a cup of each add in to the bread and yes, Ill use multiple per loaf! I always chop an extra banana or two into a chunky mash, spoon over the top of my dough and fold in with a spatula before baking.
Ive never been told my banana bread is “too much” and most people love it to bits.
This is the first time im trying with yogurt. Ill let you know how it turns out!
