Vanilla custard in Tales from the kitchen witch

This weekends treat was vanilla custard. Ive made pudding but figured I have 36 thousand eggs right now. Custard is a good use.

2 cups milk
2 tablespoons cornstarch
1⁄3 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla

Beat eggs in a bowl ( to scramble and set aside) Allow to reach room temprature.

In a pot, Scald milk, cornstarch sugar and vanilla. whisking constantly to keep it from sticking or burning
Scalding means bring to the point right before boiling. The cornstarch will start to thicken the mixture and you will see bubbles start to form around the edges.

Move pot off of heat ( to a cool burner) and add in 2 tablespoons of the mixture to the egg mixture to temper the eggs ( bring closer to the temprature of the milk)

Slowly add in egg mixture to milk mixture whisking the entire time, Bring to a simmer for 2-3 minutes and remove from heat.

Allow to cool.

Top with berries, fruit, Nutmeg, cinnamon or other sweet treats.
