Dry Cured Meats in Hello

Was just raiding the fridge for a snack when I came across a pack of hard salami sliced well over a month ago.
Dry cured meats take a bit longer to spoil. Currently licking my lips of my salami and cracker snacks.
Working in a deli for four years kinda spoiled me a bit. Not just ham, turkey or roast beef. Various of the named three including several Italian cuts, pickle and pepper loaf, olive loaf, liverwursts etc…
I miss eating breakfast during my opening shifts. I’d get there at 6 AM. Grab the cart and raid the coolers for various foods that were missed from the last night’s date take down. Make inventory of what was had and what was needed. Few others would arrive and clock in and thus began our symphony of prep work before we opened. Preparing food to package, price, chill blast then put into the coolers to sell. I ate well on left overs and could wax poetic all day about our various meats and cheeses. Perfect job for a fat guy
