My favourite Italian guest has returned. Cooking for good European families is one of my favourite experiences. It is satisfying. I no longer feel like an average, run of the mill, dime a dozen cook, but I am experiencing an evening with Dante Alighieri, or Salvadore Dali if the guest is Spanish, and I am Andy Warhol. I am transported to a beach in Europe after dinner when I say buonne notte. As a chef, you always know when someone who is actually someone is in your dining room. At first it is terrifying. All your worst nightmares fly like bats through your subconscious mind. And when you are good, you fight through the fear. Maintain balance. Use your experience. And when it is all over you realize that is the fear power people experience through their daily lives, and you helped ferry them across the river. Most powerful people are exceptionally kind when you take their lives seriously. It’s tacit knowledge. I know, because I am someone. Everyone I meet, work with, and am stuck with is someone. Everyday of my life is an event. Every dinner that is cooked for me is cooked by a Chef.
