I am now hooked on "loaded" potatoes. I'd say baked, but basically they're steamed in the microwave - it takes MUCH less time. I like the "gold" potatoes (basically white with a tinge of color) and sweet potatoes.
Often I just have plain potatoes - mixing some tiny white ones and some tiny sweet ones. Sometimes I top them with cheese, salsa, whatever's available.
This morning, I found a LARGE white potato in the bag, steamed it, cut it up, covered it with baby spinach, steamed again, then covered the whole thing with plain non-fat Greek yogurt. Filling, satisfying!!
I find that I am better with potatoes as my starch than grain. Don't know why.
