Bangin` Sausage #1. in Cooking with Timmy!

So, a long time ago in a land far far away, I got a fuck-ton of sausage on sale for two and a half bucks. I said to myself, "Wow, that's a lot of cheap sausage." followed shortly by, "Wow, I don't know how to make sausage become food." Many moons later, I looked up basic sausage recipes, thinking something with onions and peppers, as that's how my mom used to make sausage become food.
I found this recipe and HOLY FUCK. Elissa and I immediately had a foodgasm over this shit. So much so that we saved the base of the sausage (onion/pepper/tomatostuff) and refooded it with more MEAT. Which was DELICIOUS.
Anyway.
A fuckton of sausage.
2 Tbsp olive oil
2 or 3 peppers (green/yellow/orange/whatever)
2 or 3 habenero peppers
8 - 16 cloves of garlic
1 sweet or yellow onion
1 small (15 ounce) can of crushed tomatoes
1 Tbsp of dried oregano
1/2 cup Marsala or red wine
1/2 teaspoon red pepper flakes
Salt to taste
Mince all those veggies up. Cuz. Who wants to eat vegetables? Buncha weirdos, that's who.
Sear the sausages in vegetable oil, maybe five minutes each side. Goal isn't to cook them through, just to make them solidish. I had two small batches of sweet and spicy sausage, so I did the first batch and then the other. Put the sausage aside on a plate or something so you don't burn yourself when you cut it.
Toss those veggies in a pan/pot in the same oil you browned the sausage. Make it become food? I know shit about caramelizing onions, I just try to avoid burning things. Add your dash of salt here, apparently?
Add half cup marsala wine. Original recipe says to "reduce by half". Whatever that means.
Add can of tomatos, oregano, and red pepper stuff. Cook until it becomes foodish.
By now the sausages have become a temperature you can handle without burning yourself. Slice that shit up and toss in the pot. Stir. Add an iota of water if you're a dumbass and it looks too dry. Reduce to low heat and simmer for 20 minutes. THEN IT HAS BECOME FOOD. EAT THAT SHIT.
