Home made bread stuffing in Tales from the kitchen witch

We we very lucky to get a bunch of free bread from one of the food banks. They told us take as much as we could fit/use. We ended up with more then 40 loaves. Most went in the freezer but at a loaf a day, we use it. We were running out of freezer space as we did some meat shopping and it resulted in many loaves coming out of the freezer. I decided i was going to make bread stuffing from scratch. My dad loves stove top so im recreating it!

You will need

A whole loaf of bread
Spices :
Poultry seasoning
Sage
Bay leaf (Crumbled)
Salt
Pepper
Thyme
Rosemary
Parsley
Mixing bowl
Storage container

Start by toasting all your bread in the oven. We tried the toaster first. It dosent work haha. It gets rather soft inside, still moist. So use the oven. I just layered all the slices right on the rack and baked at 250 for 20 ish minutes. Cut into cubes when dried out totally. Put into a bowl for mixing.

Add in your spices and mix well with the bread. Its easy to just toss them around. Season to taste which i realize is hard with a loaf of bread but i do between half a teaspoon and a teaspoon for a full loaf of bread.

From here there are two choices. Store it or make it right now.

To store it, Put it in a air tight container, Make sure your bread is very dry!!

To make it right now.

Slice 2-3 stocks celery
1 small onion.
I chop these very fine so they will not be “seen” as well by small children who think they are devils food.

Saute onions and celery in butter to soften up.
Bring 1 cup water AND chicken stock, OR 1 cup chicken broth per every 4 cups bread cubes AND 1 stick of butter per 4 cups bread crumbs to a boil.

Turn off heat

Slowly mix in bread crumbs till they absorb all the liquid and the bread crumbs are swelling and soft. Set on the back of the stove to rest for a few minutes. Fluff with a fork and serve.

You can even dehydrate onion and celery to put in your mix and be ready to go.

I like mine with more chicken flavor them others. So i always add in an extra spoon of chicken stock.

You can also use the bread crumb mixture as chicken breading. :)
