So I cooked the fritters first thing this morning. Sy woke up to them sizzling in the pan. I wasn't planning on it, but we had some for breakfast. Really tasty and very much recommended. I started making the fritters in patty form but switched to much smaller bite size pieces. They were much better and cuter that way.
I hurried up and got ready for church...3 hours later went back to my mom's. So, have you ever been embarrassed because your phone goes off in the meeting of a work meeting... Well, we were those guys in the middle of church whose phone went off. Yeah...
Once back at the house I finished half of my month end reports. I also typed up all of the pre-op appointment information that I need to send to my family and review with my mom. I was done by 3:30ish and went to go run some errands. I stopped at a little boutique in the center of town and bought a pair of silver frosted hoop earrings. Fun stuff! I was home shortly after that and picked out some outfits for this week. I'm not 100% sure how the weather will be. We were supposed to get some snow today and I believe on Wednesday but so we haven't gotten anything. Either way, we have our annual Perfect Attendance celebration at work on Tuesday and Thursday night. I chose a couple of different options seeing how snow may or may not be coming our way. I also picked out a couple of crockpot dishes I can make for my mom/aunt/uncle while my mom is at home and recovering. They all live together so I think I'll be taking care of the crew for a short period of time. I already have my good crockpot over there and their kitchen is much bigger than mine so I think it will feel good to have space and not have to hand clean everything like I do here. Almost like a cooking penthouse suite...lol...
Yikes! Back to work tomorrow. It's going to be a long busy week, it usually is.
Just in case anyone is interested in these Zucchini and Corn Fritters
Ingredients: 2 zucchinis or 1 pound coarsely grated 1 1/2 cups fresh or frozen corn kernels (thawed if frozen) 1/2 cup dried whole-wheat breadcrumbs 1/3 finely chopped onion 1 large egg, lightly beaten 1/2 tsp dried oregano salt and pepper to taste 1 tbs veg oil
Place grated zucchini in a colander set over the sink and using your hands, squeeze out as much liquid as you can. Then wrap the zucchini in a clean kitchen towel and squeeze again. Place the zucchini in a medium bowl and stir in the corn, breadcrumbs, onion, egg, oregano, and salt and pepper.
In a large skillet, heat the oil over medium heat until hot but not smoking. One at a time, scoop up 1/4 cup of zucchini mixture, pour it into the skillet, and press on it to form a patty. Cook in batches, until browned on both sides, about 3 minutes per side. Transfer to paper towel lined platter to drain. Makes about 15 (I had much more because I made them smaller). Serves 4-6

My phone only seems to go off when I'm in the middle of a quiet office at work. Ugh. The fritters sound amazing!
