Cheesy Taco Casserole in Tales from the kitchen witch

Tonights dinner is something a WEEE bit new. Not really new so much as cooked a bit different. You will have to adjust the measurements for a smaller family if you want to make this for yourself! Its made for a lot of people.

3 lbs hamburger, Browned and crumbled. Season with some salt!
Cook burger meat with 1 whole onion diced, and a cup of tomatoes diced.
2-3 packets of taco seasoning. Depending on how spicy you want it.

Brown taco meat and season with taco seasoning. Mix seasoning with water and simmer till water is gone.

Set aside.

in the same pan, Cook 1 lb pasta in several cups of water and beef broth. I use better then boyan beef stock. You could use beef cubes too or beef broth. Cook to al-dente. Slightly firm and chewy.

Spread a layer of cooked pasta in a dish that will fit the amount of food you are cooking. Spread a layer of shredded cheddar, mozzarella and pepperjack ( or your favorite cheeses) Spread a layer of meat, and top with MORE CHEESE.

Add a half cup to a cup of beef broth in the pan. Cover and put in the oven till cheese is melted.

Top with sour cream, peppers, sour cream or other favorite taco toppings.

NOM! Hope the kids agree haha.

Instant pot version!

Saute beef and onions on saute in the IP. Drain beef and add taco seasonings with 1/2 cup water.

Set aside, In pot add raw pasta, 2 cups broth ( add more if its not enough liquid) you can also add tomatoes and salsa here. Top with burger meat.

Pressure cook high for 4-5 minutes with natural pressure release.

Top with shredded cheese and stir in sour cream and other favorite toppings. Set to saute to melt cheese.
