Since I live alone, i don't spend a lot of time making complex dishes for myself. I do like to use a few simple ingredients, then depend on "flavor principles" to make the food taste like the ethnic foods I like.

Yesterday afternoon, I made two separate dishes. I started with canned diced tomatoes and canned chick peas. For one half, I added various herbs - oregano, basil - and feta cheese. This gave it a Mediterranean flavor. For the other half, I added a LOT of cinnamon - giving the food a Moroccan flavor.

The part with feta cheese, I had over brown rice. Lately, I've begun "plating" my food, so that instead of eating the entire LARGE bowl of food, I have a smaller portion and find that I am full with that. In that way, what used to be one large meal, becomes two medium sized meals.

The other part - the one with cinnamon - I'll have over whole wheat cous-cous.

Since I live in NYC, I can go to restaurants with cuisine from practically any country in the world. But, sometimes, it's nice to be able to make it myself.

The ONLY cookbook I follow at all is the flavor principle cookbook. With whatever ingredients you have, it guides you through the condiments, herbs and spices needed to make any ethnic cuisine (within limits). http://www.gourmet.com/food/2007/03/flavorprinciple
