Here we go again. in A small but passable life.

Evening before last, the day I re-surfaced the carport, I made chicken enchiladas. A simple recipe. Boil and then cut up two chicken breasts. Mix up the chicken, a can of cream of chicken soup, and a cup of shredded cheese. Use that to roll up in flour tortillas. I ended up with eight in the casserole dish. (I should have used the 9X13 instead of the 8X12) Mix a can of cream of chicken soup, a can of condensed milk, and a can of green enchilada sauce in a bowl. Pour that over the rolled enchiladas in the casserole dish. (I had sauce left over.) Sprinkle about a cup or a bit more of shredded cheese over that. Bake at 350 degrees for about a half hour.

Last evening after I dished up Mom and I some leftover chicken enchiladas for dinner I took a portion across the street to 92 year old Lillie and then later took two portions over to another couple. I still have one portion in the frig for someone. Maybe a future lunch for one of us?

Here we go again. We sold Mom’s golf cart because she couldn’t set or release the parking brake. She sold Dad’s little scooter before that because she didn’t use it much. And now that she isn’t allowed to drive the car in the RV park (my rule, because I’m the boss now) she has found someone with a dead husband’s scooter for sale. So yeah, $200. Why not buy more stuff to take care of, find a place to park it, and basically blow money on? At least until it gets too hot next spring she can use it in the park instead of me driving her to the activity center.

Even though any of her friends would come and get her, if she’d only ask. But she won’t.

I swear, every time I manage to haul crap out of here crap just piles right back up.

I found THREE plastic pancake flippers (spatulas?) in a drawer. I guess for a three handed cook it would be fine. I threw two of them in the trunk of the car to go to donation.

I also managed to get rid of two generic-branded plastic containers when I delivered the chicken enchiladas last evening- “Go ahead and keep the container!” I’ll keep all the old genuine Tupperware. Those are all empty and stacked in the corner cabinet on the top shelf. (Mom can’t see them, let alone reach them.)

I’m using zip-lock bags to store dry goods. (Takes up less space.) And I use covered casserole dishes of various sizes for leftovers. (Microwave ready.)

I’m rambling again.

One more cup of coffee and I’ve got to take Mom to look at the scooter, drop a crap ton of fabric off at the RV park’s sewing room (Luckily Mom had only found only a small handful to keep out of all that was given to her), and then I’m going to plant some flowers for the gal I built the herb garden for.

And of course some day I need to start on the gardening around here.
