Oatmeal Chocolate Chip Cookies
- 1/2 cup + 6 tbsp Butter or margarine (Crisco butter flavored shortening works very well)^
- 1 cup Brown sugar (I prefer dark brown sugar, more molasses)
- 1/4 cup White sugar
- 2 eggs
- 1 tsp Vanilla
- 1 1/2 cups Flour
- 1 tsp Baking soda
- 1/2 tsp Salt
- 3 cups Oatmeal
-
1 bag of Semi-sweet Chocolate Morsels
-
Preheat oven to 350 degrees.
- Beat butter(s) & sugars together until creamy.
- Add eggs ad vanilla and mix until it is blended together.
- In separate bowl, combine flour, baking soda and salt and mix together (I use a fork).
- Slowly combine dry mixture with the wet mixture and mix well.
- Add oats and chocolate chips.
- Spoon onto ungreased baking sheet to desired size.
- Bake 8-10 minutes, or until cookies are slightly browned around the edges.
This recipe is pretty easy, and produces wonderfully delicious cookies. It’s a recipe my mom and I adapted from the Quaker Oats “Vanishing Oatmeal Cookies” recipe. Their recipe called for slightly different measurements, raisins instead of chocolate chips, and cinnamon.
^ I actually prefer to use half butter and half shortening. Especially in larger batches.
