Soda Bread (This recipe comes to me by way of a truly dear friend)

  • 3 cups Flour
  • 2 cups Buttermilk
  • 1/3 cup Sugar
  • 1/4 cup Melted Butter (half stick)
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1 egg (lightly beaten)
  1. Preheat oven to 325 degrees
  2. Combine flour, baking powder, sugar, salt, and baking powder in large bowl. Blend egg & buttermilk together, then add all at once to flour mixture. Mix until moistened. Pour melted butter over batter, then mix together. Pour batter into pan.
  3. Bake for 65 to 70 minutes. Cool on wire rack, then wrap in aluminum foil for several hours or overnight.

I like to serve with Irish Butter (Kerigold). The longer the bread sits in the aluminum foil, the better the taste. Be careful not to over cook the bread as this will make it dry.
