PEPPERMINT COOKIES in Living off the Grid

Ingredients: 1 box of fudgy brownie mix 1/3 cup of canola oil 2 large eggs room temperature 1 cup of milk chocolate chips 1/2 cup of chopped candy canes 1/4 teaspoon of peppermint extract
Directions:
- Preheat oven to 350 degrees
- grease baking sheet with nonstick cooking spray and set aside.
- In a large bowl, mix the brownie mix, canola oil and eggs together until a dough forms
- Stir in the peppermint extract, chocolate chips and candy canes until fully mixed. cover the dough with foil or wrap and let chill for one hour
- Once chilled, scoop about 1 tablespoon of dough onto the cookie sheet
- Bake for 11 minutes or until the tops are cracked.
- Let chill for one hour
