PEPPERMINT COOKIES in Living off the Grid

Ingredients: 1 box of fudgy brownie mix 1/3 cup of canola oil 2 large eggs room temperature 1 cup of milk chocolate chips 1/2 cup of chopped candy canes 1/4 teaspoon of peppermint extract

Directions:

  1. Preheat oven to 350 degrees
  2. grease baking sheet with nonstick cooking spray and set aside.
  3. In a large bowl, mix the brownie mix, canola oil and eggs together until a dough forms
  4. Stir in the peppermint extract, chocolate chips and candy canes until fully mixed. cover the dough with foil or wrap and let chill for one hour
  5. Once chilled, scoop about 1 tablespoon of dough onto the cookie sheet
  6. Bake for 11 minutes or until the tops are cracked.
  7. Let chill for one hour
