Creative/Healthy Eating in Food Diaries

Food is a big deal at my house. We are all picky eaters, and after watching my dad live with cancer for the past 20+ years, I happen to have an obsession with health and nutrition. This is the perfect recipe, pun intended ;-), for a challenge.
My older daughter is repulsed by dairy, so I worry about her calcium intake. She does like orange juice, which is a start. She will also occasionally eat “egg bites” with spinach , and she eats oatmeal that I secretly load up with almond butter and chia seeds. The new foods I am going to introduce to her this week include chia seed pudding and tofu.
As for my husband and me, we have our staple dinners, but they can get exhausted sometimes. The new meals I plan to make for us to try this week include spicy salmon bowl and peanut butter chicken bowl. I got both of these recipes from searching “healthy dinners in 2025.”
