I’m not participating in NoJoMo, but I like the music prompt and wanted to share.
What are your most disparate or weird music tastes? I don’t think I have any weird music tastes. I’m very particular about my music though, I remind myself of those people who can’t eat food if the texture is wrong. If the music is wrong, I can’t concentrate on anything else until it goes away! I really don’t like commercial pop music, and tend to steer clear of radio stations that play it. At home I listen to Radio 4 (talk radio) and in the car, if I’m not listening to my own music, I like Classic FM, except on a Saturday night when it has its jazz hour. I can’t relax and enjoy jazz like I enjoy classical music. Although lately I have been enjoying listening to Django Reinhardt. It’s the free form jazz I don’t like, when it sounds like a cat running up and down a piano while someone pushes a drumkit down the stairs. What I listen to in a day really depends on my mood. Some days are heavy days, Rammstein, Mastodon and Black Sabbath are my favourites. Some days are rock days, Queens of the Stone Age, Foo Fighters, Nirvana, Wheezer, Ty Segal, Pixies, Breeders usually end up on that play list. Some days a bit of country or folk, Joni Mitchell, Lankum, The Byrds or Johnny Cash. I like fuzzy, crashy music, I don’t like polished, over produced stuff. Steve Albini is my favourite producer. I like a lot of punk and goth bands from the late 70s and early 80s, there seems to be a bit of a revival of that style lately. I’m open to listening to anything, but I usually know in the first 30 seconds if I’m going to enjoy a band. If I find a band I like, I’ll upload their stuff to my phone and set my playlist to random while I’m driving, so I can’t skip it!

I adore jazz, but I'm with you on the 'cat on a piano' stuff. My musician friend calls it "self indulgent twiddling".
I also prefer the more raw and unpolished sounds. Music that has emotion in it and hasn't be produced to death.
As you mentioned liking a bit of country, have you listened to Colter Wall? I'm quite taken with him: https://youtu.be/4l4gdhPqh3E?si=SsIQiV5OfYDCkvIk
