Weekend meal prep in Tales from the kitchen witch

Ive had a migraine and so much stress. Work had another drama turn and we are livid aobut this one. But Ill come back to that one. I want to see what happens tomorrow.
But this weekend was shot. All weekend is a festival and thy have hot air balloons and with my migraines being so strong in the morning. We couldent go. I did get a phone shot on my way to work Friday but it kinda sucks! I liked the launch. New Mexico has one next month and its a HUGE one. I may try to go if we can afford the hotel.
Today I managed to make it through the walmart without throwing up. When I got home I took my anti dizziness and nasuea meds and ate and now I feel at maybe 75%.
I made soup bags!
I LOVE LOVE LOVE Meal prepping soups. They are so easy to pre prep all the veg and freeze. Then I save left over meats throughout the weeks and freeze then dump both in a pot. Water and season and good to go.
Today I bought 1 rutabaga
1 lb turnips
3 lbs yellow potatoes
2lbs baby carrots
1 bunch celery
1 bunch Bok choy
1 yellow onion ( or white if you prefer)
Total cost was $18 at the Walmart.
NOW if you dont have a family that rivels a football team. This would make you SO much more soups. But for us. this is 4 soups. Coming to roughly 4 dollars and 50 cents per soup bag.
This makes a 1 quart soup bag ( potatoes and carrots are housed separately!!) I measure by "heaping handfuls" and do one veg after the other.
So Chop all the celery. Heaping handful per bag. Peel and chop turnips and the rutabaga ( Walmart has ones bigger then a baby's head, one is ENOUGH) Divvy it up. do the Bok choy and onion.
Potatoes and Carrots I didnt freeze this time ( I used up what I had in the fridge, but cost estimated what it is for the bags. But i usually do them together in a bag in the freezer.
Today I have leftover rib eyes from the last few times we have had steak. I start those simmering first. Fall off the bones. Yes bones and everything are in the bag!! Then I chop and prep all the meal bags and as I do. I dump the handfuls for the current soup into the pot to simmer.
Add some pepper and your favorite seasonings ( I like rosemary, basil, oregano, salt pepper mostly)
I season to taste so when it tastes good, I stop. I add in some beef base/stock for a more beefy flavor. Then I let the whole thing simmer ALL day. It smells great and makes your meat fall off the bones.
I add some cream of everything soup base to thicken it right before serving. I also scoop out the meat and bones. Chop it up and put it back in the pot. I toss the bones to the dog at that point. Turn it all off and add in some frozen mixed veggies ( like peas and corn) It cools the soup in your bowl ever so slightly and they are heated up for eating.
Easy peasy yummy meal.
On the other hand, my cheeseburger soup from earlier this week went SO fast. There were NO leftovers ( think potato stew with hamburger and cheese in it. SO GOOD!)
