Muffin checkin in Tales from the kitchen witch

So my muffins texture is totally different. Given there is no fat or oil. No butter ect.
I replaced it with yogurt and banana the texture is more spongy and chewy almost. Less cake like.
Not that that is a bad thing!
I ordered some silicone mold pans instead of the metal ones ( I HATE metal pans HATE) So I didnt need papers. The paper got stuck to the first batch of muffins. In the silicone, you pour it directly in. Then when cooked you push up from the bottom of the pan and flip the mold inside out. For each muffin. It worked perfectly and they popped right out with NOTHING left in the pan.
Considering I made 24 muffins ( half choco chip and half blueberry) and I ony have like 6 left and 4 left from the batch last night. Ill say these were a hit. And its more controlled how much the kids eat of them. So I can safely say instead of bread, ill probably do muffins. It takes longer then 3 loaves of sweet breads, But its easier to feel full and done when you get one muffin vs going back for more bread.

Its almost pumpkin spice season. I make a killer pumpkin apple bread. I wonder if i can replace the oil in that too.

Ill be tweeking aforementioned muffin recipe. I want it a tidbit less spongy. Oh and the kids were not a huge fan of the glaze. Too weird they said. It soaked in lol.

However mother in law ate my chocolate granola despite (as she stated) being allergic to flax ( by allergic she means she touched it and her arm felt heavy… dont ask…) She said its fabulous and I need to make more. Considering my entire container is nearly out and its only been 4 days… Yeah I do. T hasnt touched his. Guess ill make a double batch of chocolate nut granola this weekend.

What else should I try? I have a container of strawberries and raspberries mixed. I bet that would be a yummy bread for their muffin treat next week. I love seeing my kids grab them and stick them in their lunches. We tried breakfast burritos and they were meh. Its a lot of assembly line work that the kids dont want to help with for little reward. ( they eat two per) So this is nicer.
