Banana Bread But with Plaintains! in Tales from the kitchen witch

I decided to look up and see if you could do Banana bread with plantains. Turns out you CAN!
In stead of bananas you just do plantains. The recipe said to put them in the blender. Omg so true. I thought my mixer would work. hahah I had to mash them with the beaters till they broke up and then i could mix, It took forever.

So here is the recipe i followed

Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
2/3 cup packed brown sugar
1/2 cup oil
2 large eggs, at room temperature
1 and 1/2 cups (345g) mashed plantains
1/2 cup applesauce
1 teaspoon pure vanilla extract

Directions
Preheat the oven to 350 degrees F Lightly grease a 9x5-inch loaf pan.

Combine flour, baking soda, and salt in a large bowl. Beat brown sugar and butter with an electric mixer in a separate large bowl until smooth. Stir in eggs and mashed plantain until well blended. Stir plantain mixture into flour mixture until just combined. Pour batter into the prepared loaf pan.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 60 minutes. Let bread cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
