Blueberry fritter bites in Tales from the kitchen witch

Another desert.
This is a protein “Cupcake/muffin” and they are so good!
1 1/2 cup flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt ( I just tip my grinder for a few seconds)
6 tablespoons butter melted and cooled ( dont use hot butter, it and raw eggs dont play kindly)
1 large egg
1 teaspoon vanilla extract
2 containers blueberry protein yogurt ( I love Oikos 000 protein yogurt with 15- 17 g protein in one cup) Alternate, use greek yogurt.
1 cup blueberries ( if frozen, defrosted and drained well. Save liquid for your glaze)
1 lemon zested and juiced ( two containers)
Glaze
1 cup powdered sugar
1 tablespoon lemon juice
1 tablespoon lemon zest
1 cup pureed blueberries and juices.
Muffins
In a mixing bowl:
Mix your, Flour, Sugar, Baking powder, and salt.
In a smaller mixing bowl, mix your butter, egg, vanilla and yogurt
Add your liquids to your flour and stir slowly until its mixed together.
Fold in your blueberries slowly, try not to crush them too much.
Drop by spoonfuls into muffin tins till they are mostly full.
Bake on 350 for roughly 20 minutes or till the tops are browned.
Allow to cool fully.
For the glaze.
Mix 1 cup of pureed blueberries and their juices with 1 tablespoon lemon juice and 1 tablespoon zest.
Add in 2 tablespoons milk and 1 cup powdered sugar ( less if you want less sweet)
Blend well.
When your muffins are cooled. Dip the tops in your glaze and allow to dry.
