My version of shepards pie in Tales from the kitchen witch

I have my own version of shepherds pie seeing i don’t always like some ingredients.

Ingredients.
2.5 lbs ground beef or 1/2 ground turkey 1/2 ground beef. Whatever is in the freezer. If you have left over beef chunks use those. This is one of the leftovers meals.
frozen peas and corn. ( unless you have fresh, I don’t)
2 c chopped carrots.
1/2 onion chopped.
3 c cubed potatoes ( make em small)
2 c beef broth, I make my own.
assorted spices that flavor your beefy dishes Mine include (Denali dry rub which is an Alaskan spice company local spice blend i got hooked on in Alaska, similar to Mrs. dash but better flavor. Oyster sauce and pepper. Other favorites are rosemary, thyme, sage, barley, bay, oregano, basil and tomato. I didn’t use all of these this time.

Fry burger with finely chopped onion and spices. Drain any oil. Add in liquid spices ( oyster sauce, tomato, beef broth) Set aside.

While burger is frying, soft cook your potatoes and carrots, I do this either by boiling a few minutes or microwaving a few minutes, Depends on your speed, You want them to be softer so they cook faster.

Mix peas and carrots into the burger mixture, when potatoes and carrots are soft mix them in. Stir to coat veggies with spices and broth. Add more broth if you need a bit more.

Put in the oven at 400 for 20 minutes or until Potatoes and carrots are fully are soft.

Mix up some biscuit mix. Season with thyme, oregano and sage. ( why be plain!! ) When the cassarole has softened potatoes and carrots remove from oven. Top with biscuit mix in a layer and place back in the oven for an additional 10 minutes or until biscuits are cooked/browned.
Remove from oven and serve.

This one is cool because you can make a big batch and freeze for meal prepping.
