Blueberry Banana Bread in Tales from the kitchen witch

Ive been tagged a dozen times in this post for blueberry banana bread with lemon drizzle on top.
The recipe LOOKS fabulous but calls for coconut sugar and coconut flower and plant based milk. Which is all well and good, But uh. I dont have that. SO im making it with traditional baking supplies.

1.5 cup softened butter
3 cup granulated sugar
6 large eggs beaten
9 ripe bananas mashed
6 cups flour
3 teaspoon baking soda
1.5 teaspoon salt
4.5 cups fresh blueberries tossed in 1 Tablespoon of flour ( for frozen, thawed, pat dry and rolled in flour, I use a baggie to “toss them” )

Preheat oven to 350, Spray pans with cooking spray or line with parchment paper.

Mash bananas in your mixing bowl. Do you like them lumpy? Mix less! I like half and half so I cream half then lightly mix some. Then chop some slices and quarter slices which i mix in after the fact. So you get a LOT of banana.

In a large bowl stir together the butter and sugar. Mix in the eggs and vanilla and stir until smooth. mashed bananas, baking soda, and salt, and stir until blended. Next mix in the flour. I prefer to use a spatula to do this vs my kitchen aid mixer.

Toss blueberries in flour.

Fold blueberries into bread mixture with spatula gently. Too rough and you will get blue bread! Sometimes I pour the batter into the pans and then mix the berries in when I am working with blueberries.

Press in a few extra berries and bananas into the top of the loaf.

Bake at 375 for 15 minutes then at 350 for 45 minutes or until the knife comes clean.

Allow to cool completely while mixing your lemon drizzle.

1 cup powdered sugar.

2 tablespoons fresh lemon juice ( I squeeze a lemon.... But you can use prepared lemon juice!! )
a teaspoon of zest. If you have never zested a lemon. Scrub the peel well with a brush to remove any bacteria or soak the lemon in a cleaning solution you can ingest ( there are fruit cleaners that are safe, i just scrub)
Use a zest/peeler to shave the outside of the lemon. I do discard the top layer of peel just because… paranoia.

Add the zest to the lemon juice for an extra zing!

Use a wisk to blend the lemon juice and powdered sugar. If you need to, add more lemon juice OR water if you don’t want it too tart but its supposed to contrast the blueberry banana.

When the bread is cooled, drizzle your topping over the bread and allow to solidify. Serve.
