Again it's another Paula Deen Recipe from the Southern Cooking Bible.... I had some boneless thin cut pork chops that I needed to use up yesterday, and I pretty much had everything on had for this recipe, I made one substitution because I didn't have onion on hand, but it still was a great dinner.
My dad likes his pork chops baked in the oven until they are crispy and greasy. I really get tired of his limited menu items, so I'm always trying to come up with something else to make that has more than basically meat and potatoes. So last night I made this recipe and I do believe it's a keeper. I really like the way the gravy tasted, and how easy it was to make.
what you need is:
- 4 bone-in center-center cut pork chops (1 inch thick, 1/2 pound each)
- Salt and black pepper
- 1/4 teaspoon garlic powder
- 3 tablespoons olive oil
- 4 tablespoons (1/2 stick) butter
- 2 tablespoons finely chopped onion (I substituted minced garlic)
- 1/4 cup all purpose flour
- 1 1/2 cups whole milk
- 1/2 cup chicken stock or water
- 1 can (14 1/2 ounces) diced tomatoes, drained (I used the garlic and basil tomatoes)
Lightly sprinkle the chops on both sides with salt and black pepper, then sprinkle with the garlic powder. In a large skillet, heat the oil over medium-high heat. Add the chops and cook, without moving, until a dark golden crust forms on the bottom of each, 5 to 6 minutes. Flip the chops and cook for 5 minutes more. Transfer to a paper towel-lined plate to drain.
Add the butter to the skillet and melt. Add the onion and cook, stirring, until softened, about 5 minutes. Go ahead and reduce the heat if the onion starts to brown too quickly. Sprinkle the flour over the onion and cook, stirring, for 1 minute. Slowly whisk in the milk, then the broth or water. Simmer the mixture until thickened, about 5 minutes. Whisk in the tomatoes, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spoon the sauce over the pork chops and serve up to a hungry family. (I just added the pork chops back into the skillet and mixed the sauce over them)
Now in Paula's little intro to this recipe, she says that this paired with red beans and rice is one of those recipes that she can make with her eyes closed. I paired it with green beans and boiled white potatoes and butter. It was one of those comfy dinners. Something after a long hard day that you really can just throw together.
I had leftovers for lunch today, and it was just as tasty lol! So try it or don't....if you do let me know what you think about it.
Tonight is pizza night, so no review tomorrow, unless I decided to make something for desert....which is a possibility. I guess that all depends on whether or not the kids decide to be good or crazy the last part of the afternoon. Right now they are either napping or having quiet time, which is very peaceful for me right now lol.
